* The white peppercorns are a result of the ripe red berries being soaked in water for 3 to 5 days resulting in slight fermentation which transforms the flavour. The skin is then rubbed off to reveal the white under layer. They are then dried by the sun. The white peppercorns taste hotter than the black peppercorns but have a less complex flavour. Our white peppercorns have a creamier and darker colour to other varieties. This is because the farmers use natural processes and do not bleach the peppers to make them appear whiter.
